Not at all hard.  You'll find instructions on building Aquamacs on the Wiki, and on a 64-bit machine it should automatically build for the x86_64 architecture.  I run a 64 bit version regularly, but I haven't tried opening very large files (let me know!).

I have also offered a 64bit version of Aquamacs 2.0 (with optimizations) for people who have recently donated to the project.
